It's the time of year to start thinking about picnics and cookouts. Memorial Day and 4th of July are just around the corner, and no picnic would be complete without potato salad.
I love potato salad. It is one of those comfort foods that always delights. It brings back many wonderful memories of family get togethers, barbeques and holidays.
Here is an easy picnic potato salad recipe I think you will like, too:
Potato Salad
5 large Idaho potatoes
Salt and pepper to taste
1 small onion, chopped
1/2 cup chopped celery
1 small green pepper, chopped
1 (2 ounce) jar chopped pimento
1/2 cup juice from pickle relish
1 cup mayonnaise
Boil potatoes until tender. Cool. Peel and dice into cubes. Place in a large mixing bowl along with onion, celery, green pepper, pimento, eggs, pickle juice and mayonnaise. Stir until well blended. Chill well.
Makes 10 servings.
